This was originally a Christmas Tree Biscuit recipe that usually came out tasting like dust, but I've tweaked it a bit (golden syrup instead of honey, bit of baking powder, cocoa powder and some sugar) to make it soft and tasty! You can leave out the spice to make chocolate biscuits, or leave out the cocoa to make spiced biscuits, but it really is lovely with both, lovely depth of flavour.

You will need....

100g plain flour
1 tsp baking powder
1 tsp cinnamon
1 tsp mixed spice
2-3 tsps cocoa
2 tsps sugar
70g softened butter
3 tsps golden syrup

Mix the dry ingredients together, and rub in the butter until it forms a breadcrumb-like texture. Mix in the golden syrup, using your hands if need be, to form a soft dough. Roll or flatten into cookies, and bake in a 180 degrees oven for 10 minutes or until the biscuits have risen slightly and are soft.

If you like, wait to cool and spoon some icing on top to taste. So easy, and as it doesn't require milk or eggs it's a perfect store-cupboard recipe!

Summary: Really easy, I made some last night and they were scoffed in minutes!
