Advantages: gets fruit in the kids
Disadvantages: plenty calories
This recipe is for banana bread. It is an old recipe I have adapted.
I made it on a regular basis for my niece and nephew when they were younger as a way of getting some fruit into them to give them a bit of a treat but with a healthy twist. I make it now for my toddler who I can only mange to get fruit with the exceptions of bananas.
Ingredients
6 bananas
3oz margarine
40z caster sugar
A large egg
8oz plain flour]
2 level teaspoons of baking powder
A splash of orange juice
A few drops of vanilla essence
Pre heat oven to 180 c or gas mark 4
Line a bread tin with grease proof paper
Method
In a bowl add sugar, margarine, vanilla essence and a beaten egg.
Sift in the flour and baking powder
Wisk the ingredients together either in with a wooden spoon or an electric mixer
In another bowl slice then mash the peeled bananas and add an orange juice
Add the banana mixture to the mixed ingredients the mix again.
If you want to add some walnuts an alternative then add them at this stage
Add ingredients to the loaf tin and place in the centre of the oven and cook for 50-55 minutes
You can tell when it is cooked in the same way as a cake press it down and if it springs back up it is cooked.
I tend to leave it in the oven switched off to keep it warm longer.
It is lovely cold but even more scrummy warm. It is very moist so in my opinion doesn't need butter.
