YUM YUM SUGAR AND COFFEE !!! GRETA CAKE! (Baking)

Scrummy.... Scrummy... Coffee cake recipe, well I have always loved making cakes but as always I can be lazy and my cooking is not great, so I usually resort to the packet mixes well don't we all, they can be cheaper to make but I have to say the quality is quite poor compared to good old home made cake, Anyways back to the cake This is the first cake I have made without the packet mixes and tastes just great (when made well and not burnt!) Well I have to confess this recipe has not one of those handed down over generations but one I came across in a book a couple of months back, (also is online somewhere on the bbc)

So what will you need:
2 eggs
125 grams of flours
125 grams of butter + (some for icing)
125gram caster sugar
1 tea spoon baking powder
100ml of water with 2 heaped table spoons of dissolved coffee
2 cake tins

What to do:
1, Sieve the 125 grams of flour and place into a bowl, Add the baking powder and sugar and give a good mix!

2, Add butter, then mix until soft

3, add the 2 WHOLE (white and all) eggs and mix again, Then add the dissolved coffee tea spoon by tea spoon until the strength of coffee cake you prefer (don't use all as will need with the icing)!

4, Place equally into both the tins then place in the oven and cook until golden brown approx 20-30minutes.

5, Eat the left over mixture!

6, Remove from oven and baking tins.

7, Open a box of icing sugar, Look at instructions from butter cream but instead of adding milk add the left over dissolved coffee and mix.

8, Spread the butter cream over the cake and place cake together!

THEN EAT!! And enjoy....

The cake should now be perfect and will taste great as an additional extra you can add walnuts as decoration but I prefer not to...

Also for people who just love there cake, If you want a 3 tier cake them just add another the ingredients again and use the same process but separation into 3 cake tins.

If made properly this will taste great and be nice and fluffy with a creamy sugar filling one for all the family to enjoy, and a lot less cost than a equally as good cake for sale in shops.

Summary: Easy to bake coffee cake!
