Advantages: Quick, no cook involved, simple to follow.

Disadvantages: Make sure you don't add too much condensed milk, stick to amounts

I am far from an expert baker, but because my husband has an extreme case of 'sweet tooth' I find myself making batches of tray bakes every so often to fill his lunchbox. Most tray bakes can be frozen which is an added bonus, especially when we have run out of biscuits or other sweet things.

This is a tray bake that I make a lot, primarily because it doesn't require any oven cooking, so is much quicker, but it really is very simple to make, and a lovely recipe to make with children.

This recipe is for blueberry rocky road squares, however I have exchanged the dried blueberries or dried cranberries and it works just as well, plus cranberries have been on offer recently in Tesco, so I have been adding them instead recently.

These ingredients usually make batches of approx 16 squares, but it is dependent on how small you cut them up.

200g/7 oz plain chocolate (I always use tesco value, and it works really well)Half a tin of condensed milk (395g tin)
25g/10z butter
100g chopped mixed nuts
75g dried blueberries (or cranberries)
200g pack mini marshmallows (or you can cut up the bigger ones though very time consuming)
50g/2oz white chocolate

1. Line a square baking tin with baking paper.
2. In a large bowl, place the plain chocolate, condensed milk, and butter, and heat on high in the microwave for 1 - 1 1/2 min, depending on your microwave strength. Stir until all melted, and beat until smooth.
3. Stir in the nuts, blueberries, and marshmallows.
4. Pour in to the tin and spread evenly.
5. Melt the white chocolate in the microwave for 1/2 -1 min. Stir, the drizzle over the top of the mixture.
6. Chill for a minimum of 30 minutes in fridge.
7. Cut into squares and serve.

These can be easily frozen, and taken out when requierd, but most times, even in our two person household, they don't sit around for too long!

Summary: An easy traybake that even children can make!

It seems a lot of butter and nothing like digestive biscuits to soak it up.
