This is a recipe I have now made a few times and it always goes down really well!! Initially I used the recipe from a cookbook (Green and Black's Chocolate Recipes if you want the original version!), but have made quite a few alterations, which in my opinion make it even better!!!

This chocolate pecan pie is gorgeous, and looks impressive on a table. I personally think it tastes best when left for about 12 hours after cooking as this allows the filling to set properly, whereas eating it straight away gives it a much less solidified texture.

Chocolate Pecan Pie

Pastry Ingrediants:
275g plain flour
75g icing sugar
150g unsalted butter
3 egg yolks
50g ground almonds

Filling Ingrediants:
275g dark chocolate
150g pecans (chopped)
3 eggs
225g granulated or brown sugar
250ml evaporated milk
1 teaspoon ameretto
50g unsalted butter, melted
75g ground almonds

1. Start by making the pastry. Place the flour, icing sugar and butter into a bowl and mix together. I find starting with your hands to soften the butter and break it up, then using a mixer works best. Add the eggs towards the end to make a dough.

2. Roll out the pastry. Make sure you cover the surface and rolling pin with flour as the pastry is quite sticky. This mixture will be very crumbly, so add a bit of water on the pin if necessary.

3. Lift the pastry carefully as it will still be very crumbly and place into your tin. Chill in the fridge for around half an hour and preheat the oven to gas mark 4/180/350.

4. Bake the pastry for 15 minutes. To ensure it doesn't rise, bake blind by placing dried beans on greaseproof paper. Remove the paper after 15 mins then return the pastry to the oven for 10 mins. Remove from the oven whilst you make the filling and reduce the heat to gas mark 3/160/325

5. Melt the chocolate in a heatprove bowl over boiling water. Mix together all the remaining ingrediants for the filling, then add the melted chocolate. Place the mix in the pastry case then bake for around 1 hour. Keep an eye on the pie in case the pastry begins to burn.

Et voila!!! A very yummy chocolate pecan pie. This tastes great with vanilla ice cream or on its own, however is pretty calorific so make sure you have other people to help you eat it!!!
