Raspberry Buns - my recipe for a tea-time treat (Baking)

I thought I would share with you my recipe for Raspberry Buns. These are very easy to make and even more delicious when still warm, though do allow some time for the jam to cool, so you don't burn your mouth!

The buns are an example of shaped cakes, moulded by hand. Although you can use any jam in this recipe, raspberry is traditional.
It is best to use a baking tray for these buns, as any jam running out will be contained by the raised sides of the tray.

You will need :-

225g (1/2lb) plain flour
10ml (2 teaspoons) baking powder
75g (3oz) margarine or butter
75g (3oz) caster sugar
1 medium-sized egg
approx 75ml (3fl oz) milk
45ml (3 tablespoons) raspberry jam
1 small egg

1. Position the oven shelf to just above the centre of the oven and heat to 200 oC (Gas Mark 6).

2. Sieve flour and baking powder into a mixing bowl.

3. Add the margarine/butter and rub in lightly until the mixture resembles bread crumbs.

4. Stir in the sugar . Beat the medium-sized egg in a cup with a fork and stir into the mixture.

5. Add the milk, a spoonful at a time, stirring and checking the consistency. Stop when the mixture binds together but still has a stiff consistency.

6. With lightly floured hands, divide the mixture into 8 equal-sized pieces, and shape into smooth balls.

7. Make a hole in the centre of the top by pushing the end of a teaspoon two thirds of the way down into the ball.

8. Using a small spoon, spoon a little jam into each hole.

9. Place buns on a greased baking tray, spacing them 4cm apart.

10. Beat the small egg with a fork and brush each bun, to glaze.

11. Bake for 15 mins or until the buns are golden brown.

I often use Strawberry jam instead of Raspberry when making these, both are equally delicious. Another good thing is they do not cost much to make!
