Advantages: Easy recipe with no nuts.

Disadvantages: Get eaten too quickly so none left when I want one.

If you have given up completely on the idea of being slim for summer and just want to indulge in a piece of heaven then this is the recipe for you. My daughter makes these frequently and I have had to stop keeping the ingredients in the house because if she makes them I just can't resist! They are not as sickly as some recipes and do not have nuts or icing. My husband works for an American company and when he had some colleagues over for a meeting he took some in with him to share around. The disappeared in seconds and several have e-mailed me for the recipe as they reckon they were better than they could find in the States.

Ingredients--

100g Melted Butter (margarine just doesn't taste as good)
225g Sugar (usually golden caster)
40g Cocoa Powder
2 Medium Eggs
10ml Vanilla essence (vanilla flavouring does not give a rich enough flavour)
50g Self Raising Flour
75g Chocolate chips


Directions--

Mix the cocoa powder into the melted butter and set aside.
Beat the eggs and the sugar together until well mixed, add the vanilla (be generous, I think I am usually closer to 15ml) and mix.
Pour cocoa mixture into the egg mixture and mix thoroughly.
Sift in the flour and finally stir in the chocolate chips.
Pour micture into an 8 inch square tin that has been lined with greaseproof paper.
Bake at gasmark 4 (I think thats about 180c but I may be wrong as I only use gas) for about 20-30 minutes.

It is a little tricky to tell when it is done, the top should be firm to the touch and a bit cracked but the underneath should be soft but not runny. I usually cut into the middle and if I am not sure give it another 5 minutes.

Start to cool on a rack but after about 15 minutes cut into small squares, if you leave it too long the top cracks too much when you cut it.

Sit back and enjoy, then think of a way to work off all those calories-maybe by walking back to the kitchen to get another one!!

Best of luck with the root canal, been there a few times myself in the past but you can enjoy these when it has settled down x

They sound yummy, but unfortunately I'm in the middle of a course of Root Canal Treatment, so must try to be good and keep away from gorgeous gooey cakes!
