Advantages: fresh, tangy, lovely for summer
Disadvantages: not great for chocolate lovers!!
Orange, Lemon and Strawberry Delight
Although this is technically an invention of mine, it's not really groundbreaking. Having said this, it's absolutely delicious and has a fresh flavour that's perfect for the summer months.
You will need one cake tin that is approximately 25 cm in diameter and about 2 inches deep. If you don't have one this deep you can use two shallower ones, or just use the same tin twice.
The ingredients (this will produce enough for two layers of cake)
8oz unsalted butter
4 eggs
8oz self raising flour
8oz caster sugar (i find that golden caster sugar tastes better, and you can even replace with splenda, which works well but remember that splenda is the same in *volume*, not weight!)
4tsp baking powder
2 oranges worth of rind and juice
For the middle and top:
2 lemons worth of rind and juice
150g unsalted butter
300g icing sugar (sorry to go into metric here, the main thing to remember is double the sugar in relation to the butter)
For decoration:
About twenty reasonably sized strawberries
1. Grease your tin(s) and set the oven to 150c fan or 170 conventional
2. Put all of the cake ingredients into a bowl except for the orange and using an electric whisk, food processor, or by hand blend all the items together.
3. Once it's got an even consistency, add the orange elements and mix with a wooden spoon.
4. Spoon into large cake tin, or split between two and cook in the oven for approximately 20 minutes, although it could be up to 40 for the one big tin.
5. While this is cooking, cream the butter and icing sugar together, then add the lemon parts and mix until well incoporated.
6. Once the cake has cooked, remove it from the oven and allow to cool. Either split the large one in half to create a sandwich effect, or simple leave the two smaller tins separate for the time being.
7. Take your bottom sponge and smother liberally with the lemon butter icing. The layer some sliced strawberries over the whole of the bottom layer, before placing the top layer on.
8. Smother this layer with the rest of the icing, and then top with whole strawberries cut in half. You may add some icing sugar, although it's not absolutely necessary.
