Advantages: This is a very tasty cake

Disadvantages: Not so good for those with nut allergies

This is a cake that I've been trying to perfect for years now and I think I've finally created the tastiest peanut butter cake in the world! Obviously this isn't a cake for those with peanut allergies. Make you sure you check that whoever eats the cake isn't allergic to nuts; you don't want to end up killing your friends!

This is a really easy cake to make so don't worry if you haven't much experience with baking!

For the sponge you'll need:

200g sugar
200g butter (the real stuff tastes nicer, but something like Stork will do)
200g self-raising flour
4 eggs
4 tablespoons of peanut butter

(If you want to make a smaller, calorie concious cake, then simply divide the ingredients by two - i.e. 100g flour, 2 eggs, 2 tbsp peanut butter etc)

To make the sponge:

Before making the sponge, put the oven onto 160oc.

1. Cream the sugar and butter together in a bowl until light and fluffy. Next add in the flour and eggs, then beat well until you have a thick batter. Then add in the peanut butter and stir well.

2. Divide the mixture into two greased and lined sandwich tins. I usually use 20cm sandwich tins, but it doesn't matter too much. Again, remember to compensate for size; if you're making a massive cake, increase the quantities.

3. Pop the sandwich tins into the oven for half an hour or until cooked. The best method to see whether its cooked is by running a knife under cold water then poking the sponge. If the knife comes away clear then your cake is cooked. If not, pop it back into the oven for five minutes and try again.

4. Up-end the cakes onto a cooling wire. Once your cakes have cooled down (and they really do need to be quite cool for the next step) spread peanut butter over both sides and sandwich them together.

If you're feeling extra indulgent, add a vanilla frosting in between the layers of peanut butter.

To make the frosting:

175g icing sugar
75g butter
Vanilla flavouring

Simply combine the butter and icing sugar together, making sure to add a few drops of vanilla essence to flavour it.

Summary: A really indulgent peanutbutter cake

Hmm sounds good. I think you should make one for me - purely for review purposes, of course! ;)
