I made this salty, cheese bread for a garden party last week-end. They disappeared very quickly. They look like the house of a snail that's why we call them snails. For the first time probably it seems to be a bit difficult but it isn't. The dough can be made in a bread maker (1,5 hours) then it can be prepared and baked in an hour. There will be a lot of snails from this quantity of ingredients. I recommend them freshly baked.

Shopping list:

- 300 ml milk
- 50 ml olive oil
- 2 eggs
- 1,5 tablespoon salt
- 2 teaspoon sugar
- 0,5 kg plain flour
- 7 g instant yeast
- 100 g butter or margarine
- 100-150 g grated cheese (I use extra mature cheddar for the intense cheesy taste)


Equipment:

- Bread maker (if you don't have bread maker then a big mixing bowl)
- Pastry board or clean flat surface
- Rolling pin
- Teflon baking tin or non-stick baking paper in the normal tin


Dough:

I drop all the ingredients in our bread maker to knead the dough. If you don't have one, put the ingredients in a large bowl and knead it for 15 minutes at least. Next time you'll do it in your brand new bread maker, I'm sure.
So the ingredients for the dough in the order you should put them in the bread maker:
- 300 ml lukewarm milk
- 50 ml olive oil
- 1 egg yolk (put the egg-white apart)
- 1 tablespoon salt
- 2 teaspoon sugar
- 0,5 kg plain flour
- 7 g instant yeast
I use the dough programme of my bread maker. It takes 90 minutes to finish.


Filling:

While the bread maker works I prepare the filling. Ingredients:
- 100 g butter or margarine
- 1 teaspoon salt
- 1 egg
- 100-150 g grated cheese (I use extra mature cheddar for the intense cheesy taste)
I melt the butter in the microwave oven, I add the egg, and the salt and mix them well with a spoon. When it is solid I add the grated cheese and put it apart.


Preparation and baking:

When the bread maker finished with the dough I get it out and cut the dough in two halves. Preheat the oven to 170-180 C (gas oven 3). I take out the pastry board and put some flour on it. I put one half of the dough on it and I stretch it as thin as I can. Then I place on it the half of the filling. Spread the filling on the dough with the back of a spoon and then roll it up. Cut it in trapezoid forms. Anoint the top of them with egg-white and place them (just as they stand) on a Teflon baking tin. If you don't have a Teflon baking tin then use non-stick baking paper on it. Put the tin into the preheated oven and bake them for 20-25 minutes until the top of them is medium brown. Take care to put them well apart from each other because they will rise a little bit. While the first ones are in the oven, repeat the stretching with the other half of the dough.

Summary: A perfect party cake (it goes well with beer)
