Advantages: Yummy and quick and easy to make
Disadvantages: They don`t last long enough
I used to make a lot of biscuits and cakes but I`ve sort of forgotten all about for the past couple of years, so over the past 4 days I`ve been on a biscuit making frenzy. Even if you can`t cook these are really easy to make and virtually impossible to mess up. I`ve made about 10 tins full this week and every batch has been gobbled up the same day, although it would`ve been nice if hubby and the kids had actually let me have some. **Cookies** **WARNING** HIGHLY ADDICTIVE These are simple and only take 10-15 minutes to bake. You can adapt this recipes to your own liking, if you don`t like chocolate chip then try adding peanuts or almonds. If you want a slightly different taste then try substituting some of the flour with cocoa powder, or my favourite, mint hot chocolate. 125g(4oz) butter ½ cup(4oz sugar ½ cup(3oz) brown sugar ½ teaspoon vanilla escense 1 egg 1¾ cups(8oz) self-raising flour ½ teaspoon salt 125g(4oz) chocolate chips Cream together the butter, sugars and vanilla until light and fluffy. Butter must be room temperature(very soft), or the mixture will be very hard to mix. Add lightly beaten egg gradually and beat the mixture well. Mix in sifted flour and salt, add chocolate chips and stir well. Shape the mixture into balls, the size depends on how big you want your cookies, I do them about an inch thick for medium size biscuits. Cover a baking tray with grease proof paper and lightly grease. Spread the balls of mixture out on the tray, don`t forget that they will spread out, so leave enough space between each ball. I use 2 trays, that way when one is ready I can put the next one straight in the oven. I get around 4 rows of 4 balls on the one tray. Bake at gas mark 4 for between 10-15 minutes. This recipe should make about 40 medium sized cookies. To check if they are ready test according to colour because the biscuits will look and feel extremely soft and spongy to
the touch, they should turn golden brown. As they begin to cool the biscuits will start to harden. When ready take them off the tray with a flat spatula and place into your biscuit tin. Be warned, by the end of the day you will be very annoyed because there won`t be any left, and you`ll have to do it all over again.
