Advantages: Filling
Disadvantages: Dont try this if you do not like Corned Beef!!
Not sure if you could call this a beef recipe but i couldnt find any other category to put this under!!
When i was kid this was something that was made a fair bit - which put me off for many years however i've got a bit of a twist on this old classic and was quite pleasently susprised myself for what i managed to knock up!
Ingrediants:
1 Tin of Corned Beef (Little tip put in freezer for 30 mins or over night in the fridge so it's easier to slice)
1/2 lb of Vegetables (broccolli, carrots, cauliflower, butternut squash, mushrooms etc)
1 Chopped Onion
1 Clove of Garlic
2 - 3 Large Sweet potatoes
Herbs, Salt & Black Pepper
Olive Oil
1 tin of tomato soup (or for a healthier option 1 jar of passatta)
50g of cheese(i prefer to use half fat mild cheader cheese)
1 Large Tomato
Method:
Pre head the over to gas mark 6 or 200 degrees.
Peel and chop veg into small chunks. Peel and slice the sweet potatoes and par boil for 10 minutes.
Fry the garlic and onion in the olive oil, add the veg and sweat for 1 min. Add the soup or passatta and season to taste with the herbs, salt and pepper bring to the boil and then simmer.
Drain the potatoes and leave to cool whilst you slice fairly thinly the corned beef.
Next get a casareole dish and add a bottom layer of sweet potato followed by a layer of corned beef and then spoon some of the veg mixture. Keep adding the layers like you would if making a lasgane.
Once you've reached the top the last layer on should be the sweet potato. Next sprinkle over the cheese and slice the tomatoes and place on top.
Cook in the middle of the oven for 30-40 minutes to ensure the sweet potatoes are thoroughly cooked and enjoy!
