I'm a confirmed carnivore and love a good bit of meat most days of the week, my favourite meat is beef and love to experiment with different ways of cooking and creating delicious recipes from scratch.

One of my favourite foods at college and university as kebabs, yep the obligatory end to a night on the town. I still love them but not the fat content or the cost of them so I decided to have a go at making my own.

My version is a like a cross between a kebab and fajitas/wraps. The beauty of these is that you can vary the ingredients to include anything you love and leave out the bits you dont and of course make them as spicy as you like, in my case very!

Ingredients - (serves 2)
500gr lean beef mince
1 white onion finely chopped
Half a red chilli finely chopped
Chopped coriander
Salt and pepper to season
1 beaten egg
2 soft flour tortillas

Method -
Mix the beef mince with the coriander, onion, chilli and beaten egg to combine and season with salt and pepper. Shape into 4 sausage shapes and cook for 15 minutes under a hot grill turning once during the cooking time.

Serve two beef koftas per person, I like to roll them up in a hot soft tortilla (heated up in a hot dry frying pan) I add sliced red pepper, shredded lettuce, natural yoghurt and a little chilli sauce.

You can make these as spicy as you like by adding more chilli and spices or leave them out if you prefer something milder. I had these for dinner tonight and now feel completely stuffed!

I would much rather cook these than go to the local kebab house, they take less than 20 minutes to prepare and cook and are so much more satisfying.
