Those of you who know me will anticipate that the recipe I post here will be a healthy option one.
A lot of people think that watching your weight means eating turkey, fish and chicken meal after meal, but red meats can be included into your healthy diet. In fact,eating lean meat does increase good nutrition (beef is a good source of iron, zinc, and vitamins B6 and B12).
If you work on a portion size of beef is three ounces,a serving of lean of beef contains between four and nine grams of fat, which isn't too bad as part of a weight loss programme.
Here is a tasty, inexpensive and low fat beef recipe for you to try.
The addition of lentils means that less meat can be used - cutting both the cost and the calories but keeping the protein content
BEEF AND LENTIL KEEMA
Serves 4
300g extra lean minced beef
1 tsp cumin
1 tsp cinnamon
1 tsp mixed spice
½ tsp turmeric
½ tsp nutmeg
1 tsp chilli powder
2 tsp coriander
1 large onion, chopped
2 tbsp red lentils
1" piece root ginger, grated
2 garlic cloves, finally chopped
1 courgette, finelly diced
1 can chopped tomatoes
150g frozen peas
1 small tub natural low-fat yogurt
Salt and pepper to taste
150ml water
1 small bunch fresh corriander, chopped
Spray pan with low fat spray, add the onion, ginger and garlic and cook for 6 - 7 minutes until golden brown. Add all the spices and stir well over a low heat for 2 - 3 minutes. Add the minced beef, continue to fry - stirring frequentlyuntil the meat has browned and is crumbly.
Add the tomatoes, lentils, courgette and water. Cover the pan and simmer for a further15 minutes. Add the peas , cook for 5 minutes. Stir in the yogurt and fresh coriander.
Heat the mixture - very gently - do NOT allow to boil or the yogurt will split. Season, to taste, with salt and pepper
