I was brought up in a part of Italy, tuscany, where we have very good meat and it was only when the mad cow disease started in Uk that I became vaguely aware of the possible negative consequences of beef.
Still. I am great fan of meat in general and beef meat in particular.
The following recipe is very simple to follow.
Ask for diced cubes of beef meat to your butcher, clearly the better the cut, the more expensive it will be, but also the tastier. For each 100 gramms fo meat, you will need the following. 50 Gramms of potatoes, 100 gramms of fresh tomatoes, plus garlic, olive oil and onions.
Put the olive oil in a pot and fry it, it normally takes 1-2 minutes, you should cook with low fire. Once the oil if frying, drop the previously chopped onions and garlic in the pan and stir them every 1-2 minutes with a wooden spoon. It is important that you use olive oil and also that you use a wooden spoon, the olive oil because it is healthier than other oils and the wooden spoon because it will not damage your pan.
Then drop the tomatoes, if they are fresh, they will release water, but mantain a certain degree of pulp. Also put the potatoes, which you had previously peeled and diced.
Leave the whole thing to boil for 15 minutes and then add the beef. I do not like peppers, but you can have peppers too.
Stir the whole lot regularly every 5 minutes for half an hour or so and then serve lukewarm.
This is a winter dish and should go well with some Chianti wine or also some wine from Piedmont, like Barbera or Barolo.

- 23/10/09 Sounds yummy but how about you add a splash of the wine to the dish with a dask or oregano or seasoning /or maybe a bit of worcestershire sauce?? would that still be just as tasty?? |
