This is a recipe I have experimented over the years and can be eaten at any time of day, as breakfast, brunch, light lunch, light dinner or supper. It's a Spanish?mexican fusion and I have to warn in advance that if you follow my recipe, it will be somewhat hot and spicy.....but you can always adapt it to your own taste.

So what ingredients do we need then?

2 x tbsp olive oil
1 x 400g tin of tomatoes (preferably chopped)
1 x handful of Chorizo sausage - diced into one cm chunks - not the awful sliced stuff you get in packets
1 x green chilli pepper - sliced (with or without seeds - that's your choice)
1 x tsp dried red chilli flakes
1 x green pepper - diced or sliced, as you prefer
1 x good dash of tabasco sauce
1 x good dash of worcestershire sauce
2 x eggs

So what do we do with all of these ingredients then? It's really quite simple:

1) Warm the oil in a large, preferably non-stick frying pan and fry the chunked chorizo until it begins to brown and crisp up. Don't drain the oil as this now tates of the delicious chorizo.

2) Add the green pepper and the green chilli pepper and cook through until they begins to soften

3) Add the tinned tomatoes, tabasco, worcester sauce and dried chilli flakes - allow to simmer for about 10 mins - this allows the tomatoes to absorb all of the other flavours

4) Make two small wells in the mixture and, very carefully, crack the eggs into the wells. You will find that the white of egg will combine with the tomato and begin to form a nice base. Allow the eggs to cook to your liking.

5) Using a flat spatula, plate the finished article and enjoy!

Maybe i'll avoid this for brekkie, It might wake me up with a startle! Sounds good for lunch though :)
