Is it wrong that I watched Heston Blumenthal trying to revamp Little Chef on Channel 4 last night I had the most insane craving for pancakes with cherries and icecream?

In any case this morning when I was awakened at an ungodly hour they still seemed like a good idea! I used to think they were the height of exotic when I was a little girl - I don't know if Little Chef still do them, if they do I shall have to visit one soon. In the meantime home-made will have to do.

Funnily enough at silly o'clock I didn't have any tinned cherries to hand and ice cream for breakfast is a step too far even for me; however I did have the necessary to whip up some chocolate pancakes. I thought I would share as they are a "naughty but nice" breakfast.

Ingredients:
1 egg
150g plain flour (I've used self raising in an emergency - seemed ok)
30g of melted butter (microwave)
325ml of milk

Fillings: Chocolate spread or melted chocolate (the kids' chocolate button stash works well), jam, sugar and lemon or banana

Method:
1) Put everything in a big jug (milk first) and blend with a hand blender or whisk
2) Heat a frying pan and brush with oil - I tend just to put a spot onto the pan and wipe with kitchen oil carefully.
3) Add a spoon of mixture and swish around well. When the pancake browns round the edges turn over - however you can.
4) put on a plate and add your filling.

I have to report that a delicious breakfast was had by all in this house - I gave them a token modern healthy twist by serving with blueberries on the side.

The quantities I have used are thanks to Nigella - give these a try if you fancy a change for breakfast, they are delicious!

Summary: A breakfast treat - pancakes aren't just for Shrove Tuesday!
