Frittatas are basically a less fattening crustless quiche. And pretty much everyone in the WORLD loves quiche! (or they should=) This recipe is one of my families favorites for our fun Sunday Brunches. Serves 6 People

5 Egg Yolks
10 Egg Whites
2 Crushed Cloves of Garlic
1/2 Cup of Milk
1 Medium Diced Tomato (or small can of drained diced tomatoes)
1 Small Diced Onion
1 Cup of Chopped Broccoli
1/3 Cup of Chopped Pepper (green or red)
1/4 Cup of fresh chopped Basil (or 2 tsp of dried basil)
3/4 Cup Shredded Mozzerella Cheese
1/4 Cup of Grated Parmesean Cheese
1 Tsp of Sea Salt (or table salt)
1 Tsp of Pepper
Optional - 3/4 Cup of Sliced Mushrooms
Optional - 5 Slices of Chopped Bacon

Heat oven to 375. Take 10 Large Eggs and seperate 5 yolks out. ( You can keep them in if you wish but it's a LOT less fattening taking half the yolks out , 20 grams of fat versus 40 grams). Whisk the eggs with milk , Salt, Pepper, and Garlic. Take the Mozzerella and Parmesean Cheese and combine the two. Mix in the remaining ingrediants with the egg mixture with HALF of the cheese mixture. Pour into a large pyrex glass 11" x 8" greased casserole dish. Cook in oven for 15 minutes then pour remaining cheese on top and cook for another 10 minutes. Check the middle with a knife to make sure it's cooked through, if not, cook for another few minutes and keep checking it. Serve Warm ( use some salsa as a topper if you like, but that's just the way my family does it, but it IS good with or without the salsa)
