I love anything chocolaty and love chocolate brownies, however you often find that they have nuts in them, and I hate nuts in cakes!!! So when my mum discovered a no nut chocolate brownie recipe I had to try it out. Although I'm a huge chocoholic, and would happily stuff my face with the fudgiest, gooiest chocolate cake going, that's not really going to do anything for my waist especially with swimsuit season coming up! That's why I use this recipe when I need a chocolate fix. It doesn't use eggs or butter and uses cocoa rather than acutal chocolate, so therefore is slightly lower in fat than most brownie recipes. Yet is still a yummy brownie with a chewy, crunchy top and soft centre. I absolutely love baking and I also love chocolate so when I came across this chocolate brownie recipe (Mary Berry - Simple Cakes) I just had to make it! It was delicious, I have now baked it several times and it has always been loved, I've taken it to parties, BBQs, to work, etc and everyone seems to love it and ask for more. I obtained this recipe from the book Barbeques & Sizzlers by Tarla Dalal, but the recipe needed crushed walnuts and since I have none at home I subsituted it with desiccated coconut instead. Glad to say it turned out good,yummy, sweet but not too sickly with a hint of coconut. Easy to make just throw everything into the bowl, mix, pour and bake.
