Advantages: Easy to make, most ingredients are storecupboard items

Disadvantages: None

My husband was brought up in a house where his mother baked dozens of traybakes and cakes and made her own jam and marmalade, so quite obviously he thinks that buns or jam that are shop bought 'never taste as good', and I have to say that I agree for the most part.

However because of his mother's baking, he has a very large sweet tooth, and craves all things sugary. I on the other hand prefer savoury. Nonetheless, since I got married I have been having a try at baking, and so far so good, which keeps hubby happy as well, and the lunchbox full.

This is a recipe that I tried for hazelnut chocolate brownies, and it was very easy to make. So much so that I have made them qutie a number of times, and most of the ingredients are those that I would usuallyl have in my cupboard anyhow.

This recipe usually makes around 12 brownies.

100g/ 3 1/2 oz plain flour
1/4 tsp salt
20g/3/4 oz cocoa
150g/ 5oz icing sugar
100g/ 3 1/2 oz butter (preferably unsalted) melted
2 tbsp golden syrup
150g/ 5oz plain chocolate
2 large eggs beaten
1 1/2 tsp vanilla essence
40g/ 1 1/2 oz chopped hazelnuts

1. Preheat oven to 180C (Gas 4)
2. Grease a square baking tin.
3.Sift flour, icing sugar, cocoa and salt together in a large bowl.
4. Break chocolate into pieces and melt in microwave.
5. When melted, add butter and golden syrup to chocolate and stir until well blended. Then set aside to cool.
6. When this chocolate mixture is just lukewarm, stir in eggs and vanilla essence.
7. Mix in the dry ingredients from the large bowl and mix until there is no flour visible.
8. Mix in the chopped hazelnuts
9. Then pour into the tin, and bake in the oven for 25-35 minutes, until top and edges are slightly crusty, but centre still quite soft. Leave to cool in the tin.

This can be served with cream, or my preference, carte dior ice cream!

Et voila! Scrummy brownies that create no fuss and that can be made time and time again.

Summary: Easy brownies, perfect served with a large dollop of ice cream! MMM
