Advantages: Great winter warmer, but with a difference

Disadvantages: Somehow doesnt taste as good in summer!?

This tradishional cake has been made for centuries as a traditional cake to eat in the autum time. (especially around bonfire night.) well this udated version will make sure your night will go with a bang!

Ingredients.

200g of oatmeal
200g of Self raising flour
200g of Demerara sugar
1 tsp of Ground ginger
1/2 tsp of ground cinnimon
pinch of salt
200g of Brown treacle
100g butter or Margerine(butter works best)
100g of lard (sounds digusting but its worth it)
1 medium egg (large will do but if you don't like your cake to eggy then medium)
1 tsp of milk

to decorate (optional)

A tin of peaches
20g of demerara sugar
tsp of ground cinnamon


Turn on the oven at gas mark 3


Mix the Oatmeal, flour, sugar, ginger, cinnamon and salt in a large mixing bowl. Rub in the butter and lard, with your fingers, until the mixture looks even. Then stir in the treacle, beaten egg and the milk, until the mixture is smooth.
Put the mixture into a well greased cake tin.

OPTIONAL

(Remove 4 of the peach halves fron the tin, lay them carefully on top of the mixture in the cake tin. Then evenly sprinkle the sugar and cinnamon over the peahes.)


Place the tin in the centre of the oven for 2 hours making sure the mixture doesn't begin to burn. Remove from the oven and leave to cool on a wire rack, (or clean grill pan).

Sevre as a light treat to your guests or use as a dessert with a scoop of extra creamy vanilla ice cream.
