Advantages: Simple to make, keeps for weeks

Disadvantages: Bit of a messy mix, but worth the effort

A HEALTHY TEA-LOAF - Using a beaker sized cup...

-1 cup of All Bran
-1 cup of mixed fried fruit (no peel)
-Half cup brown sugar
-1 cup of cold tea - brew and leave to go cold
-some walnuts if you want, or other nuts (chopped small)

Method:

Put all of the above ingredients into a bowl, cover with clingfilm, and soak overnight.

Next day as follows -

Take 1 cup organic self-raising flour, 1 egg beaten, 1 cup of milk to mix.

Sieve flour into mixing bowl. Add the beaten egg and 1 cup milk. Add the soaked fruit. Mix well together. Place in a well-greased loaf tin lined with greaseproof paper and bake for 1 1/2 hours at 325F/170C or gas mark 3. You will know when it is cooked if you tap the bottom of the loaf and it sounds hollow. Leave on a wire cooling tray.

When cold, put in an airtight tub or wrap tightly in tinfoil and keep for weeks, just like malt loaf really.
Spread with real butter (other substitute spreads are available) and enjoy with a brew.

Summary: Better than your usual brand of malt loaf!
