I am yet to try a fruit cake which tastes as good as my Grandmas. Last year she kindly gave me the recipe and I was surprised at how easy it was to make. So I'd like to share it with you.
Pre heat your oven to 150 C fan assisted. Add 10-20 C if non fan assisted.
Seive 1lb self raising flour into a bowl and add a teaspoon of mixed spice and half a teaspoon of salt.
Rub in 6 ozs of margerine to the flour mix.
Add 8 ozs of caster sugar and 4.5 ozs of currants and 4.5 ozs sultanas.
Then mix in a 1/4 pint of milk and a 1/4 pint of water.
Line a 7 inch round tin with grease proof paper and pour the mix in. Cut a rough piece of grease proof paper to cover the top of the tin. Let the paper slightly touch the middle of the mix (very lightly) so that the fan in your oven doesn't blow it off! The reason for the paper over the top is so that it cooks evenly and doesn't burn.
Put in the oven at the pre heated temperature and after an hour you can take the grease proof paper off the top. Cook for a further half an hour.
Stab a knife through the middle and if it comes out clean that means it cooked enough.
Leave to cool on a wire rack, then enjoy!
If you don't like sultanas then you can just add the whole amount (9ozs) in currants or mixed fruit, you could try any dried fruit.
Summary: A great cake to have with tea!!
