The best Rocky Road recipe!!! (Cakes)

If you're wanting the perfect recipe for rocky road then look no further!! I make this cake for the tea shop I work in and it's a great success with the customers.

Ingredients include:

11oz milk chocolate
4 ½ oz plain chocolate
4oz unsalted butter
3oz mini marshmallows (or marshmallows cut in to small chunks)
3oz digestive biscuits, broken into small pieces
2oz glace cherries, chopped
2oz almonds, chopped (no skin on almonds)

Basically you mix the marshmallows, broken biscuits, chopped cherries and chopped almonds in a bowl. Melt the milk and plain chocolate and butter in the microwave on a low heat until it forms a thick yet smooth chocolate mixture. Mix the marshmallows, biscuits, cherries and almonds into the chocolate mixture and transfer into an 8 inch square tin. Press down with a knife.
Transfer to the refridgerator until the mixture is set and then cut in to about 9 pieces.

If you prefer plain chocolate to milk chocolate you can swop the quantities around. Good quality chocolate isn't necessary, I use Morrison's own and none of the customers in the tea shop have ever complained! Only commented on how nice it is!

Overall very yummy and addictive!!
