My kids are always wanting to make cakes, or help out in the kitchen but the problem is I’m not the best cook in the world, in fact anyway I can find to cut corners on preparing a meal I will use it.

At the moment my 2 year old is really into mixing, she loves to mix up the Yorkshire pudding mix, so I thought I would let he make some little cakes my email friend had suggested.

I think we have all tried or made cornflake/ricecrispie cakes, you know the ones with all the chocolate dribbled over the top, but these ones are a little more yummy and chewy.

As with all things you want to make with a little one you don’t want to have too many complicated bits to deal with, so out went the weighing scales and measuring spoons and in came the hands :o)

Ingredients

2 large galaxy chocolate bars, or your favourite chocolate.
2 Mars bars
3-4 mommy handful’s of Cornflakes
40 (approx.) cake cases
A dash of milk

Preparing

You will need a large saucepan for all the ingredients to fit in, break all the Galaxy bars into small pieces, and place all the cases separately onto the work surface, and the Cornflakes at hand ready to add.

Making

You can make these in the microwave or on the hob. If you decide to use the micro wave make sure you remove the dish regularly to stir.

We decided to use the hob method so we could stir the chocolate, as I said my daughter is really into stirring things.

We broke the Galaxy bars into pieces and put them into a large saucepan and then placed in the Mars bars. We put the saucepan on the heat and got a large wooden spoon and began to mix. You need to make sure you mix the chocolate at all times to get it to melt, if you find that the mixture is beginning to harden or go like a cake mix I find a dash of milk works wonders, as it automatically liquidises the chocolate.

When all the chocolat
e it melted remove from the
heat and quickly add the cornflakes. You will need to do it quickly, as the chocolate will begin to harden. We added about 3-4 handfuls of cornflakes, but I suggest you add them gradually until there is no more chocolate for the cornflakes to mix into.

As soon as all the cornflakes have been added take a dessert spoon and a teaspoon and put the mixture into the waiting cake cases. Don’t worry about how they look in the cases as they are meant to look all mishaped.

When you have filled the cases place them onto trays or plates and pop them into the fridge to harden.

They don’t take many minutes to harden and then you can take them out and enjoy.

They are soooooo delicious, not like the cornflake cakes you’ve tasted before. The toffee caramel in the Mars bars makes them really chewy, but beware they are very addictive, and yumingly fattening.

So give them a try, anyone can do it, even my 2 year old :o) and best of all they only take a few minutes to do.

Kids just love 'cooking'! I'm not so keen on doing the washing up afterwards though! ;-)
