Easy to Make Throw Together Cake (Cakes)

Ever since me and my sister were knee high to a short person we have wanted to help our mum make cakes. This recipie is for a really easy to make cake that even the smallest of small people can help with (or the unculinarily gifted can make). It is a light sponge cake that is delicious when iced with buttercream or jam and cream.

Equipment Needed

large mixing bowl
electric mixer (or wooden spoon + strong arm)
2 cake tins (8 inch or so)
measuring spoons
scales
skewer

Ingredients

6oz soft margarine
6oz castor sugar
6oz self raising flour
3 eggs
1.5 teaspoons baking powder
2 tablespoons cold water
0.5 teaspoons vanilla essence

Method

1. Throw all the ingredients together into the mixing bowl (see - nice and easy)
2. Mix together untill smooth texture with no lumps
3. Divide into the two cake tins
4. Place in a hot oven at around 180 degrees C for 25 minutes
5. Check they are cooked by inserting a skewer into the centre - if it comes out clean they are done
6. This easy cake can then be stuck together with jam and cream - yummy! Decorate as you wish, for example we have mini eggs at easter time - double yummy!

Variations

* Use only 5oz of flour and replace the vanilla with 1oz of cocoa powder for a chocolate cake
* Add cherries or mixed dried fruit
* Use a cake tray with paper cases to create around 24-30 mini cakes

This is a basic sponge cake but it is delicious. It can be heated up with custard as a desert or fancily decorated as a birthday cake - any way you make it is tastes great and is so easy to make!

I'd use butter. It'll be lighter if you beat the ingredients in separately. Quick and easy though.
