Advantages: Easy to make, freezes well, very tasty!

I wanted to put this in the Vegetarian section, but I have already done a Vegetarian recipe and apparently that is my quota filled. (That one should probably have gone in the Potato recipe section, on reflection, of even this one...) Anyway, this recipe does have cheese in it!
I absolutely love Moussaka - I've never had a lamb one because I have been Vegetarian since my teens and didn't come across it a few years a go. What I love about it is the aubergine, and the cheesy sauce - really winter comfort food that you stick in the oven and then serve with some good bread and a green salad. Until recently I used to buy ready made Vegetarian Moussaka, but then I discovered this recipe and never looked back!
This recipe serves four, either in one big dish or it also works well portioned into those individual foil containers and can be frozen - home made convenience food is the best!
Ingredients:
100g green lentils (or red if you prefer) - washed
1 chopped onion
6 chopped mushrooms
1 tin of tomatoes, chopped
1 chopped red pepper
400 ml stock
1 Aubergine
3 potatoes, boiled and sliced
150g grated cheese, or to taste!
250 ml milk
2 tbpn plain flour
2 tbsn olive oil
Oil for frying
1. Fry the onion, pepper and mushrooms in the oil until softened.
Add the lentils and the stock, bring to the boil and simmer for about 20 minutes, until the lentils are tender.
2. Slice the aubergine and fry the slices in some olive oil - or you could roast them on a baking tray.
3. In a saucepan make a roux with the oil and flour, add the milk and 3/4 of the cheese.
4. Pour the vegetable mixture into a casserole dish (or individual dishes). Layer aubergine slices on top and then a layer of potato slices. Finish with cheese sauce and then top with the remainder of the grated cheese.
5. Bake at 200c for 30-40 minutes, the cheese should be browning and bubbly on top!
Easy peasy and very tasty - hope you enjoy it a much as I do!
