Now the recipe I will be reviewing is not my own, it's my mother's so I can't take all the credit!! She has been making these little jewels for years and I reguarly see them around Christmas time which is great!! They give me fond memories of the whole family around at Christmas, enjoying food, alcohol and of course presents!!!

As far as I am aware she was given this recipe by my grandmother and as continued the tradition of making these, very rarely changing ingredients.

Ingredients:-

100 g pistachio nuts, deshelled
25 g sugar
High quality dark chocolate (my mother generally uses Green & Blacks)

Method:-

1. Bring the salted water to the boil and let the nuts boil for 30 seconds, in this way the brilliant green colour remains.

2. Rinse the pistachios immediately in cold water and remove the skin from the nuts so that only the green nut remains.

3. Put the nuts and the sugar in a blender and run until it has become a thickish paste.

4. Now you can mould the paste into different shapes but do not make them too big as they easily break then. My mother tends to shape them into small rectangles (quite like the shape of cadburys caramel)

5. Melt the chocolate and dip the pistachio marzipan pieces into it. Put them to "solidify" either in room temperature or in the fridge.

6. Eat and enjoy!

It's such an easy recipe to create and perfect! Not all people like marzipan and I am one of them, but I really do enjoy these, especially in the winter!

My mum has started to use cranberries and various types of nuts which I haven't yet tried but they do look incredibly pretty!! Ideal for Christmas, given in hampers and pretty much at anytime of the year!!

The chocolate can obviously be changed, if you don't like dark chocolate (it does have a bitter taste) you can always try milk and white chocolate. I prefer the white chocolate as it seems to go with the marzipan better (but thats my opinion!). Green & Blacks do a lovely selection of chocolates which would be incredibly nice!
