Chocolate Pecan Cookies (Cookie Recipes)

Ok, so these cookies are seriously rich with so much chocolate but really delicious. If you don't like pecans you can use walnuts or anything you want.

You will need:
200g dark chocolate
100g butter
50g light muscavado sugar
1 tsp vanilla extract
1 egg (free range)
100g pecan nuts
100g plain flour
1 tsp bicarbonate of soda

1. Pre-heat your oven to gas mark 4 or 180ºC.
2. Melt 100g (half) of the dark chocolate in a bowl over a pan of boiling water.
3. Once melted take off the heat and beat in the butter, sugars and egg.
4. Stir in about 75g of the pecans.
5. Chop the remaining 100g of chocolate and add 75g of this to the mixture and mix.
6. Add the flour and the bicarbonate of soda and combine.
Heap 12 spoonfuls of the mixture, spaced apart onto a baking tray.
7. Poke the left over pecan and chopped chocolate on top of the cookies - there is no need to spread the mixture.
8. Bake for about 12 minutes (depending on your oven) until firm.
9. Remove from the oven and leave to cool on a wire rack.
10. And finally - gobble (especially nice when still warm as the chocolate is still melted).
