My husband is a huge lover of peanut butter and after seeing Tony Soprano eat it from the jar with a spoon, he's taken up this discustng habit too. When I came across the recipe for these peanut butter cookies I knew he'd love them. They really are stunning! When they have just been cooked they are kind of chewy and soft and I think hey have to be the best cookies I've tasted.

Peanut butter cookies.

You will need:
125g butter and extra for greasing
150g chunky peanut butter
225g granulated sugar (you will die when you see how much that is!)
1 egg, beaten
150g plain flour
1/2tsp baking powder
pinch of salt
75g peanuts, chopped (I don't always use tese and they are still nice)

How to make them:

1. Lightly grease a couple of baking trays with butter.
2. Beat the butter and peanut butter together in a bowl.
3. Add the sugar gradually and beat well.
4. Add the egg gradually and beat well each time.
5. Sieve the flour, salt and baking powder into the mixture.
6. Add the chopped peanuts.
7. Spoon the mixture onto a baking tray leaving a couple of inches around each spoonful to allow space for the cookie to expand.
8. Bake in a preheated oven 190'C/375'F/gas mark 5 for around 15 minutes or until golden brown.

It may feel like the biscuits aren't properly cooked but as they cool you will see that this is what gives them the soft, chewy texture.

I'm a big lover of chocolate so at stage 6 of the cooking stage I sometimes add chocolate chips. I also like to spoon melted, dark chocolate onto the biscuits when they have cooled. You can always rely on a bit of chocolate to make things ten times better. My hubby disagrees so I have to leave some 'Naked' for him or he gets a bit grumpy:)

This makes a batch of twenty and are best eaten warm or a few hours after being made, however they will keep in a tupperware box for a few days.

As you can see by the ingredients that these biscuits are loaded with calories. I hate to think how many miles I'd have to walk to burn these off. It would probably be hundreds of miles because in our house me and my hubby tend to eat the lot in one sitting.

Summary: The best cookies ever.
