Lolly Log is not quite a cookie - but is defintely closer to a biscuit than a cake so here it is!
Now this is a treat that I discovered in New Zealand where this is sold everywhere. I have not found it anywhere else but am such a fan that I am spreading the word!
This is not the healthiest recipe in the world (see biscuits, condensed milk and butter as key ingrediants but everything in moderation). The good news about this recipe is that it is so easy to make - I am a bit of a disaster in the kitchen and I can make an amazing lolly log!
OK ingrediants
250g of malted milk biscuits.
Butter (125 g)
half a cup of condensed milk
Grated coconut (to coat the log)
If you are in New Zealand then a bag of Fruit Puffs (New Zealand sweets)
If you are not you will have to make do with marshmallows.
How to make:
Crush the biscuits into fine crumbs (or I guess that you could use a blender!)
While you are doing this melt the butter and then add the condensed milk.
Chop the marshmallow sweets into reasonable sized lumps.
Add the biscuits and sweets to the butter and milk and stir.
Shape the mixture into a log (or swiss roll shape) then cover the log in the flaked coconut, (which definitely counts as one of your five a day fruit and veg!!!)
Refridgerate until the log is solid and enjoy with a cup of tea.
Summary: A New Zealand recipe that should take over the world!
