This is a recipe I have used a few times, and is great for anyone who does not like cooking! These do not have to go in the oven at all and are very quick and easy to make.

You can omit the coffee, as I often do when I make them now, add a little water instead and maybe try using coconut , peanut butter or some choc chips . Or you could just simply add more oats, for a more oaty cookie!

You will need :-

115g butter (softened)
135g caster sugar
15g cocoa powder
15 ml strong brewed coffee
3ml vanilla essence
140g rolled oats

Cream together the butter, sugar, cocoa, coffee and vanilla.

Add oats and stir them in. Then roll the mixture into separate balls of around 1 inch diameter. After this, simply set them onto wax paper.

And that's it! No cooking required. Just quick and easy cookies.
My favourite is probably omitting the coffee and using coconut instead, but they are all delicious.
I think overall I still prefer to bake cookies in the oven, but these are a great and quick alternative.

These are also fun to make with your children as they are so easy!
I first discovered this recipe when my children were little and they made these at school.

Sound like a good idea. I'd have to substitute the coffee though - can't stand the stuff!
