It was recently my little nephew's fourth birthday, and to help my sister out with the party food, I offered to bake some buns - both for the children and adults who would be there.

First off I made the old faithfuls like top hats and rice krispie buns, but I still needed something a little more mature for the adults. A friend of mine passed on this recipe to me for coconut cookies, which she claimed were extremely easy to make and tasted great. So, I feeling that it was worth a go, I gathered up the ingredients and got to more baking.

Ingredients (these quantities make about 16-18 cookies depending on how big you make them)

60g softened butter
1 large egg beaten (I used 2 medium eggs instead)
glace cherries - sliced in half
150g plain flour
125g caster sugar
75g desiccated coconut

(Most of these ingredients will be in a kitchen cupboard, particularly if you do any form of baking or cooking)

Method

1 Preheat oven to 180C
2. Tip butter and sugar into a bowl and mix together until smooth.
3. Add the beaten egg to the mix.
4. Take out two large tablespoonfuls of coconut and put these aside. Add the rest to the mix. Then add the flour.
5. Mix together to form a firmish dough.
6. Divide the dough into little balls (mine were approx 4m diameter) and then roll in the reserved coconut.
7. Place the balls onto a lined baking sheet/parchment and flatten them out to resemble small cookies. (Make sure you leave some space between each cookie as they spread out when they are cooking)
8. Place half a glace cherry into the middle of the cookie.
9. Bake in the oven for approx 15 - 20 minutes until starting to turn light brown.
10. Remove from oven and let cookies stay on baking sheet for a few minutes before moving them to a cooking rack.

These biscuits can also be frozen, and I was able to freeze some extra for hubby and take the rest to the party, where they went down a storm with the adults and even some of the children.

I will certainly be making this cookie recipe again. I already had all the ingredients, so I didn't even need to go to Tesco to pick them up, and the method is extremely easy to follow. You can't go too far wrong, and my friend was absolutely right when she said they taste great!
