Advantages: quick easy to prepare and cheap for the family to eat under a £5er for 4

Sausage casserole
Cooking for a hungry family can be quite a chore if you run on a tight budget as I do so I devised this lovely sausage casserole that is cheap and easy to do.
1lb Good quality sausages although cheaper brands can be used
1 large onion peeled and chopped
2 - 3 carrots peeled and chopped
2 - 3 potatoes peeled and chopped
1 leek
tin chopped tomatoes
tin plum tomatoes
1/2 swede chopped and peeled
1 parsnip peeled and chopped
2 stock cubes preferred vegetable or beef
either way which ever cube you go for is good.
salt and pepper to taste
Garlic clove 2 good sized ones crushed (the segments not the whole bulb)
worcester sauce just a dash
for extra umph
Once cleaned peeled and chopped place veggies and garlic in bottom of good sized casserole pan, add sausages tomatoes both tins and water to cover crumble into water stock cubes and season well. mix together and put in oven about 200degrees c or around 5 0r 6 gas. For around 1 - 2 hours checking occasionally incase the ingredients start to dry out if so add 1/2 pint more stock and finish cooking once veg are soft and sausages are cooked through that is it you can add some thickener if needed to bring it all together but to be honest I am not sure you will need too but if you do a small amount of flour water should be sufficient to thicken it up.
This meal can be cooked and prepared for under £5 and serves 4 healthy appertites. You can add new potatoes as a side dish and some green beans if you wish or just eat with crunchy bread.
Easy to make no messing about precooking veg just pile into casserole and away it goes.
I hope you enjoy it as much as we do. For an extra treat add a glass of red wine if you have any lying about it gives it another dimension.
Summary: nice with wine or on its own thick or thin gravy its up to you good healthy fare
