Advantages: Nutritious and cheap.

Disadvantages: Can feel messy to prepare.

Please don't go bleurghhhhh!! Until you at least read this.

The way most of us last tasted liver was at school and it was a disgusting leathery slab containing what looked like a graphic map of the underground there were so many tubes in it.

It doesn't have to be like that, honestly.

Try this if you don't believe me. Try it if you do!

For two people you need half a pound of liver. Sheep or calves liver is the best. Pig liver is a lot stronger in taste but it is okay too.

Finely slice the liver into small strips.
Put two tablespoons of flour in a plastic bag. Cornflour if you have it.
Seaon the flour with salt and pepper.
Put the liver in the bag and shake it until the liver is coated in flour. It looks a right mess at this stage but don't worry.
Finely chop an onion and fry it gently in butter or oil until it becomes translucent.
Plonk the contents of the plastic bag into the frying pan with the onions. Keep the heat low under the pan.
Use a wooden spoon or spatula to seperate the strips of liver as it cooks.
When it has all changed colour add a mugful of hot water from the kettle.
The mixture will start to thicken up.
Add a splosh of red wine if you have any open. If not open some. (it's a good excuse!)
Stir in some oxo or bisto granules to thicken it a bit more.
Add as much liquid as you want gravy.
Try the gravy and season it to your taste.

Serve with baked potatoes or mash. Plus a vegetable or two of your choice.

It's important not to overcook liver as this ruins the taste and texture.

This is a very cheap dish. It costs about £2.50 for a good meal for two. It is very quick and easy to cook. Cooked this way the liver is tasty and very tender.

Liver is very good for you as it contains iron and lots of vitamins.

Summary: You can't say you don't like it if you don't try it! (Good Grief. I sound like my Nana!)
