Disadvantages: they don't cook themselves ;)
Pork and apple burgers and oven chips:
This is a pretty cheap and filling meal for a family of four. 500g of pork costs about £2 (jan 2009). You can of course use oven chips but I thought I would include the home made version as they are yummy and also can be cheaper when potatoes are on offer - or dare I say it in the bargain bit - my last bag of potatoes was 5p!
I have tried to be accurate with quantities but this is my own version of various other recipes.
Ingredients:
500g of minced pork
approx 3-4 tbsps of bread crumbs (blitz in food processor) - if you don't have access to processor you can decrust 2 pieces of bread, and soak in a LITTLE milk, when soggy use in recipe
1 apple, quartered, cored and grated
1 egg yolk
1 onion
1 garlic clove
Thyme or sage to your taste.
A little flour
1) Chop the onion and fry til golden with the garlic (NB you can use frozen ready chopped if cheaper or garlic salt)
2) Mix the onion with all the other ingredients. I like thyme with apple but you could try sage and any other flavourings you like. Season to taste - I tend not to add salt but you can if you like.
Form into burger shapes about 1.5 cm thick - I tend to make quite small burgers
3) you may want to coat in a little flour and you can put them to one side to cook at the same time as the chips.
Oven chips;
Potatoes - as many as you want - and a little olive/sunflower oil
1) peel potatoes and cut into chip shape - if you have time to presoak them in salted water they will be a little more crispy as this removes some of the starch.
2) Heat the oven to 200 degrees C and put a little oil in the tray - a couple of tbsps should do it - you are aiming to coat not smother the chips in oil
3) Boil the chips in water for no longer than 5 mins, drain well.
4) put them into the oil - carefully - they will sizzle. Make sure you mix the chips around so they are fully coated.
They will take about 20 -30 minutes to cook. I sometimes remove the excess oil with kitchen towel.
The burgers can be cooked in the oven and will take about 20 mins or grilled if you have a seperate grill - or also griddled.
I like to make a lamb, apricot and morroccan spice version of this recipe but lamb mince is a little more pricey.
