Advantages: fills up a family of 4 for a few quid
Disadvantages: long cooking time
This recipe feeds my hungry family of four is no hassle and is cheap .
Sausage Casserole - ish !
Ingredients
1 Pack of sausages ( I get cheap ones but i make sure they are min 70% pork but use which you like )
3 Carrots chopped chunky
1 tin of baked beans
1 tin of chopped toms
1 onion
large handfull of red split lentils
small amount of vegetable or chicken stock
salt , pepper , pinch of mixed herbs , teaspoon of paprika
optional things to add that work well are garlic , mushrooms , chopped up bacon , green pepper.
I make this is the slow cooker and put it on at breakfast time but can easily be done in the oven i would say a good hour at 180 ish.
Method :
Brown sausages lightly in a pan , then remove and place in casserole dish , add tomatoes beans , lentils , onions , carrots and any optional extras , season and add a teaspoon of paprika and a sprinkle of mixed herbs and enough stock to cover.
then place in slow cooker for 6-8 hours or oven approx 1hr - 1hr 30
The lentils go to mush which is great because none of my family like lentils .. ( apparently ) but they make the dish quite filling and it is now a family favourite in this house.
you could serve with potatoes , pasta or rice but we usually just have a few chinks of crusty bread.
this same recipe also works well with a bit of pork shoulder if you dont fancy sausage , you will need to adjust oven time accordingly.
Summary: great if you have a slow cooker , can vary it to suit.
