This is a wonderful and tasty dessert which is a little different. The ingredients below are based upon a serving of four so adjust for fewer people or just give bigger portions.


Ingredients

250grams of fromage frais
grated rind o 1 lime
1 tbsp caster sugar
125 ml double cream
1 mango
juice of 1 lime
4 tsp caster sugar

This is easy to make, the reason for two amounts of caster sugar is that the first is used for the mousse and the second to make the mango sauce.

Mix the fromage frais, lime rind and 1tbsp of caster sugar togeter in a bowl. Whisk the double cream in a seperate bowl and fold into the fromage frais.

Line 4 decorative moulds with muslin or cling film and divide the mixture evenly between the moulds then fold the muslin over the top and press down firmly

To make the sauce slice the mangoi on each side of the large flat stone then cut the flesh from the stone and remove the skin. Cut off 12 thin slices and set aside for later. Chop te remaining mango and put it into a food processor along with the lime juice and 4 tsp of sugar and blend until smooth.

To serve turn out the moulds onto a plate and garnish with the mango slices and the juice. A couple of lime rinds on the top add to the effect.

This is a wonderfully refreshing dessert which is just perfect especially if the main course has been quite substantial, it is also lovely for a summer dessert after a BBQ.

If we hadn't had so many deserts in the past 2 weeks, I wuold try this today, but I think I'll wait...

wasn't sure about the ingredients but it actually sounds lovely...will save this for later x

Definitely VU on the recipe side, but some more details would be that much more perfect.
