Coconut Bananas (Desserts)

This is a lovely Chinese dessert which is a big favourite with my family, the only downside is that it does require quite a few ingredients and certainly for osme this is the only time I use them.

Ingredients

3 tbsp shredded coconut
60g of unslated butter
1 tbsp grated ginger root
grated zest of 1 orange
60g of caster sugar
4 tbsp of lime juice
6 bananas
6 tbsp Grand Marnier or any other orange liqueur
3 tsp toasted sesame seeds.

To prepare heat a small non stick frying pan until it is very hot and add most of the coconut for about one minute stirring constantly and then remove from the pan and allow to cool.

Melt the butter in a large frying pan and add the ginger, orange zest, sugar and the lime juice making sure it is well mixed together.

Peel and slice the bananas length ways and place them cut sie down in the butter mix and cook for between one and two minutes or until the sauce starts to become stick. Turn the bananas to ensure both sides are coated in the sauce.

The bananas should then be removed and placed on warm plates.

Return the pan to the heat and then add the orange liqueur lending it well. Next the fun part as you get to set it alight and allow the flames to die down before pouring it over the bananas.

To serve sprinkle with the remaining coconut and sesame seeds. It is lovely served with a small scoop of ice cream or on its own and should be served still warm.
