This here is one of my favourite desserts. Its got two of my favourite things in it...Strawberries and white chocolate. Its heaven on a plate! Its creamy and dreamy, and not too difficult to make......here goes

Serves 4 or 5

Ingredients:
-750g strawberries
-2 tbsp lemon juice
-225g grated white chocolate
-7g powdered gelatine
-450g double cream
-30g icing sugar

To serve:
-biscottis
-more strawberries
-some sprigs of fresh mint

You can skip the to serve bit if you like, but if you are entertaining, or just fancy something a bit fancy, then it really makes a difference!

Method:
-Place half the stawberries in a blender and blend until smooth
-Pass pureed strawberries through a sieve into a bowl
-add the lemon juice and the rest of the strawberries (sliced) into the bowl
-Melt the chocolate by placing in a heatproof bowl over a pan of simmering water
-In a separate bowl, add 50ml water to the gelatine and leave for 5 mins
-Add all the sugar with a quarter of the cream and simmer till warm, then add the geletine water. Don't let this mixture boil!
-Add the cream mix to the chocolate, and stir till smooth, then add 3 quaters of the strawberry puree mix
-Pour the rest of the cream into a bowl and whisk until it forms soft peaks when whisk is removed
-fold the whipped cream into the chocolate and strawberry mix
-Pour into small serving dishes and leave in the fridge to cool (preferably overnight, but at least for 4 or 5 hours)

-to serve pour the remaining puree over the mousses and place a strawberry and a sprig of mint on the top.

This does take a little effort to make, and its pure torture waiting for it to cool and set, but its worth it all when eating time finally arrives!!
