Very tasty Tiramisu (Desserts)

This is a recipe for a Tiramisu which I made on Valentines day for the first time, and surprisingly was a hit! I dont have much cooking experience and found this incredibly easy to make and it tasted really good. There are a few recipes for tiramisu which all look similar but this is the one which I used:

Ingredients(serves two):

A pack of sponge fingers(20-24)
300ml Strong coffee
Cocoa powder
3 Tablespoons Brandy
250g Mascarpone
4 Tablepsoons of icing sugar
150 ml single cream

Method:
1) Mix the cream and icing sugar together in a bowl and then whip until thickened. Add one tablespoon of brandy and whip again.
2) Boil the kettle and make a normal coffee, adding the remaining brandy and icing sugar, ensure it is mixed and then allow to cool down to room temperature.
3) This is the fun bit! Once the coffee is cooled you need to dip the fingers into the coffee, but not for long otherwise they will break and go very soggy. Then you layer them into the bottom of the serving glass.
4) Next you top the fingers with the mascarpone mix, then repeat with the fingers and the mascarpone until you reach the top.
5) If you have any coffee left, drizzle it over the top of the tiramisu and let it run down the side.
6) Dust the top with cocoa powder and leave in the fridge to cool down.

The recipe says to use Marsala but as I didnt have any I used any brandy which seemed to work well. I also put more brandy into the coffee mixture as I like the taste. I liked it but if your not too keen on alcohol then maybe stick to what the recipe says.

Overall this took about 20minutes to make two very big tiramisu's which tasted very very nice!

Summary: This is a real crowd pleaser and is so easy to make, give it a go!

I've gone off tiramisu since an Indian friend of mine consistently made it for every event / meal I invited her across to. It was her main show piece LOL...but I didn't have the heart to tell her I didn't like it. For 2.5 years I had to dodge it until I returned to the UK ;-)
