One of my favourite puddings which always goes down well on a Sunday after roast is apple or pineapple sponge pudding.

I usually make it using apples but I recently tried pineapples and it was lovely. Also i once added blackberries with the apples which was also lovely. Could also use Rhubarb, plums, gooseberries etc.

Here goes

Ingredients:

filling:
450g of cooking apple peeled and sliced or 450g of sliced pineapple.
75g (3oz) of caster sugar to sweeten if using apples

for sponge:
100g (4oz) Self raising flour
pinch of salt
100g (4oz) butter at room temp
100g (4oz) caster sugar
2 beaten eggs
30ml (2tbsp) fresh milk

custard, cream or icecream to serve

Tools:
Large mixing bowl
Small bowl
Cup
Whisk
Wooden spoon
1.4 litre (2.5 pint) greased ovenproof dish

Method:

1. Pre heat oven to 180c (350f) or gas mark 4.

2. Grease baking tray and line the bottom with your fruit. If using apple use caster sugar between layers to sweeten.

3. The create the sponge mixture. Sift flour and salt into small bowl.

4. Cream butter and sugar together in large mixing bowl until the consistancy is light and fluffy.

5. Beat two eggs with whisk into a small bowl or cup.

6. Now add the eggs a little at a time using one spoonful of flour each time into the butter and sugar. Mix this well with wooden spoon.

7. Once all of the eggs have been mixed in, add the rest of the flour along with the milk and stir thoroughly.

8. You should be left with quite a thick but smooth consistency. Make sure you have no lumps.

9. Now cover the fruit with this mixture smoothing it down and making sure its right to all edges.

10. Bake the pudding for 1 - 1 1/4 hours or until golden brown. Use a cocktail stick or knife in the middle to make sure it comes out clean.

11. Serve warm with custard, cream or ice cream.

Quite a simple thing to do and it tastes delicious!!
