I think a lot of deserts these days can be quite expensive to buy. Being on a diet I know that all of the chocolate ones with cream were out of the question. I decided to try and make something sweet that I could enjoy as part of a healthy diet.
Blueberries are something that I tasted not so long ago when I was on a mission to try different fruits. I was quite surprised when I tasted them to find they were quite sweet and bitter. Considering they are good for you I decided to put them in a little desert recipe.
Blueberry fool:
Takes about 5 minutes to prepare although a little over an hour is needed to chill.
Ingredients:
The ingredients listed below serves 2 people.
Approx. 150g blueberries
50g low fat Greek yoghurt
75g fromage frais
2 teaspoons of artificial sweetener
The recipe:
Keep around 10 blueberries to the side, and with the rest pop them in the microwave for about a minute, then allow to cool at room temperature for about an hour or so.
Put the cooled blueberries in a food processor until fully blended.
Mix together the yoghurt, fromage frais and sweetener to a nice small glass. Add the blueberries and stir around to create a cool swirling effect. Chill for about 10 minutes before adding the rest of the blueberries.
The result:
I would recommend the blueberry fool to anyone that is trying to cut back on the fatty deserts but still would like something sweet. This is definitely unlike any deserts I have seen in the stores and it is cheap and easy to make too. The desert is creamy and the sweetness of the blueberries is just right. If you don't like blueberries you can always use strawberries or raspberries. I will definitely be making a lot of these in the summer months.
