Advantages: Tastes amazing!

This really has to be my favourite pudding ever. I have borrowed (stolen) this recipe from my mum; its her "secret recipe" sticky toffee pudding. I absolutely love it! Obviously it's not good on the waistline BUT life is about eating in moderation ad having the odd treat now and then. I feel responsible here and that this recipe should carry a warning... One you have eaten it then you may be truly addicted for life.

Here goes, copied from her handwritten note....

Serves 6

Pudding
1 handful of dates
1 tsp vanilla extract
1 tsp coffee granules
1 tsp baking soda
5 tbsp unsalted butter
480g plain flour sifted
1tsp baking powder
210g granulated sugar
1 egg beaten

Sauce
7tbsp unsalted butter
210g single cream
340g brown sugar

Directions

1)Bring a saucepan full of water to boil. Add the dates and boil for 5 minutes.
2)Strain the dates and place in a bowl of cold water. Remove the skins and pits from the dates.
3)Place the skinned and pitted dates in a saucepan with 1 cup of water, the vanilla extract, baking soda and instant coffee. Bring to the boil, reduce the heat and simmer for 3 minutes. Set aside to cool.
4)Heat the oven to 180C or Gas Mark 4. Grease a 8"12 baking dish
5)Cream the butter briefly to soften, add the date mixture, baking powder, sugar and flour and combine the egg. Stir gently but do not over mix.
6)Spoon into the baking tray and bake for 25- 30 minutes.
7)While the pudding bakes make the sauce. Combine the butter, cream and brown sugar with 3 tbsp of water in a saucepan and bring to the boil. Reduce the heat and simmer for a few minutes.
8)Keep the sauce warm and remove pudding from the oven.
9)Cut into squares and then pour sauce over top of the pudding.
