I would almost hesitate to call this a recipe, it's so simple ... perfect for informal occasions, sharing with friends, or just a greedy night in! A friend of mine introduced me to this divine concoction - and she is actually a trained pastry chef, which must give this 'recipe' some credibility. Preparation time is measured in seconds!

Digestive biscuits
Tub of mascarpone
Redcurrants - destalked
~~~ Instructions ~~~
1. Take a digestive biscuit
2. Spread thickly with mascarpone
3. Pile redcurrants on top
4. Repeat steps 1-3. Probably many times.
You can prepare a pile in advance, though I wouldn't recommend much in advance in case the biscuits go soggy. I prefer just to put out the ingredients and let everyone make their own - more fun that way!
This is a great way to use redcurrants - a fruit I love but never know quite what to do with. Of course you could use other fruits here, but the juicy tartness of jewel-like redcurrants works really well against the creamy sweetness of the mascarpone and the crunchy digestives. They look deceptively impressive too!
Warning - these are ludicrously more-ish!
