Advantages: Quick, easy and foolproof, Minimal mess
Disadvantages: Probably extremely high calorific value
Jewelled fairy muffins.
My daughter received a recipe book as a gift a few years ago as a Christmas present, and we put it to use for her birthday (which is new years day) making following various recipes from the book.
One of the recipes was Jewelled fairy muffins. We found them really easy and fun to make and the end result was fantastic, the looked and tasted fantastic. I had many parents request the recipe for these. These muffins are a huge hit with gown ups and mini-grown ups.
To make 12, good sized muffins, you will need
150 ml (1/4 pint) milk
65g (2 1/2) oz plain chocolate drops
150g ( 5oz) caster sugar
65g(2 1/2 oz) butter, softened
1 medium egg
150g (5oz) self raising flour
Paper muffin cases and a baking tray/ muffin tray.
For decorating you will need
75g (3oz) butter, softened
175g (6oz) icing sugar, sifted
a few drops of vanilla essence
2 teaspoons of milk
small sweets and sugar sprinkles.
Preheat the oven to 190 degrees c, 375 degrees f, gas mark 5.
1) Put the milk, chocolate drops and 50g (2oz) of the caster sugar into a small pan. Then, gently heat the pan on a low heat.
(remember to keep stirring so the mixture does not stick)
2) When the chocolate has melted, and the sugar has dissolved, remove the pan from the heat and leave the mixture to cool.
3) Put the butter into a large bowl and stir until creamy. Add the rest of the sugar and stir the mixture until it is fluffy.
4) Break the egg in to a mug and stir with a fork. Add half of the egg to the bowl and stir it in, then add the rest and stir it in evenly.
5) sift half of the flour into the bowl. Pour in half of the chocolate mixture and stir it win with a spoon.
6) Sift in the remaining flour and add the rest of the chocolate mixture. Mix everything together well and spoon the mixture in even amounts into each case.
7) Bake the muffins in the oven for 15 minutes, then place them on a wire rack to cool.
8) For the icing, put the butter into a large bowl and stir it until it is creamy. Add some of the icing sugar and stir it in.
9) Add the rest of the sugar, a little at a time, stirring it in well. Then add the vanilla essence and milk, and stir them in.
10) Peel the paper cases off the muffins. Use a blunt knife to spread icing on top of them, then press on sweets to decorate.
11) Enjoy.
I really am not much of a Delia Smith in the kitchen, much of what I bake never comes out right. This recipe is fool proof, it's quick, easy and not really messy.
This is the number one cake recipe in our house. I hope you enjoy it too.
This recipe was taken from Christmas Fairy Cooking from Usbourne Activities. Lots of other great recipes in this book but this is my favourite by far.
