Advantages: Fish is good for you, a perfect meal for long cold evenings, can be adapted to suit needs

I like nothing better on a long winter's evening than a nice fish pie (well, there's lots of dishes I like actually, but this is definitely one of my favourites). There's something about the combination of fish and mashed potato which is so comforting - this is the epitomy of happy food! Depending on how much of it you eat (I am a self-proclaimed pig) it is actually a pretty healthy meal. It also freezes well, so I generally make the portion for 4 people and freeze half (or we take the other half to have at work for lunch).

Of course it isn't only a dish for winter - we have it all year round - enjoy!



----Fish Pie Recipe (serves 4)----

There are many variations on fish pie, so this is just a guide.

~Ingredients~
500g/1 lb potatoes in chunks
275g/10z parsnips in chunks (use more potatoes if you don't like parsnips, or you could try carrot or swede)
1kg/2¼ lbs white fish fillet (e.g. cod, haddock) skinned and bone free (You might like to halve this and add prawns or scallops to the pie)
2tbsp plain flour
2tbsp vegetable oil
25g/1oz butter
90ml/3floz milk
salt and pepper
2tbsp chopped parsley (preferably fresh)
50g/2oz grated Cheddar cheese


~How to make~

Heat the oven to 190°C/375°F/Gas Mark 5.

Boil the potatoes and parsnips in salted water until tender (about 15 minutes).

In the meantime cut the fish into strips. Put the flour on a plate and season with salt and pepper. Turn the fish in the flour until coated all over and shake off the excess.

Heat the oil in a frying pan and fry the fish until golden brown.

Place the fish into a lightly greased ovenproof dish.

Drain the potatoes and parsnips and mash with the milk (add cream too if you're feeling naughty!), butter, parsley and season to taste.

Spread mixture evenly over the fish and sprinkle with cheese.

Bake in the oven for 15-20 minutes or until the cheese has melted.
