Advantages: Very tasty - the whole family will love it!

This is the recipe for my best fish pie! The sweet potato really compliments the oily salmon well and it goes down well with the whole family! A lovely winter warmer and really easy to make :o)
Ingredients:
2 large salmon fillets
2 handfuls of cooked prawns (optional but you should increase the amount of salmon if not including the prawns)
25g butter/margarine
15g plain flour (or cornflour)
300ml milk
black pepper
lemon juice
2 large potatoes, peeled and cut into chunks
2 large sweet potatoes, peeled and cut into chunks
a little oil, spray oil or butter
Method:
Cook the salmon however you prefer - I like it steamed as this keeps the fish nice and tender and doesn't dry it out.
While the salmon is cooking start cooking your potatoes - boil the potatoes and either boil or steam the sweet potato.
You also need to make a basic white sauce - melt the butter in a pan then remove from the heat. Blend in the flour then very gradually add the milk. Keep adding a little more, stir, a little more, and so on until it's all blended into the flour (use a whisk if you get any little lumps!). Return to the heat, bring to the boil and simmer until it begins to thicken.
Once the salmon is cooked, place it in a large oven proof dish - I have a rectangular one that is about 2 inches deep and is great for this but any dish would do! Break the salmon up gently so it's flaked but still a bit chunky! Add the prawns in now if you're using them then sprinkle over some lemon juice and black pepper and pour the white sauce over it all and mix gently.
Once the potatoes and sweet potatoes are cooked, drain well and mash each. You then need to mix them together but don't mix too well - keep it so you can see some white and some orange as it will look nice in the finished dish! You then need to spoon the potato mixture over the top of the salmon and prawns and smooth out so all the fish is covered. Grind some black pepper on top and either brush/spray with some oil or dab some tiny bits of butter/margarine on top. Put in an oven at around 180 degrees for approximately 10-15 minutes until it starts to turn nicely brown.
Serving ideas:
Lovely with some green veg like green beans or mange tout or even some lovely warm, crusty bread.
