I love curry and so does my other half, and I make this on a quite regular basis. Sometimes, instead of king prawns I will use chicken and exchange the noodles for rice. It is one recipe that I have tweaked time and time again and this is the version that I am using at the moment. Sometimes I will add a bit more garlic or more curry powder, but even with changing the basics a little, it will always still taste fantastic.

I cheap completely on the noodles and never make my own and use the packet noodles that you can get in the Chinese and Indian section in the supermarket (in with the tins and nann breads etc) and use medium ones and use one each slab (as I call them) of noodles for one person, So normally I will stick in two slabs in boiling water and cook to the packet.

The ingredients to make the curry

3 table spoons of vegetable oil.
3 cloves of garlic - chop really finely - or as finely as you can do yourself.
2 chilli's - add which ones you want I get the pack of three that you can get in the vegetable section in the supermarket and could not tell you what they are called but they give you the hot rating on the front of the packet.
1 whole white onion - chopped finely
2 table spoons of curry powder.
100ml of double cream.
However many king prawns that you would like, I normally pop in half a packet when it is between the two of us.
Juice of one lime.
Basil - chopped up - half a handful.

To make the King prawn curry sauce.

1. Pop the vegetable oil in a large deep frying pan.
2. Put in the onion, garlic and chilli all in together and cook for around 5/10 minutes.
3. sprinkle the curry powder all over, try to cover everything in the pan.
3. Pour the cream into the pan and , and then leave everything to cook through and simmer over a medium heat.

Around about now you want to start cooking the noodles as they take 10-15 minutes.

4. Add all the defrosted king prawns and cook them in the sauce for ten minutes or so.
5. Add the juice of the lime.
6. Make sure the king prawns are cooked throughout and check the noodles are done.

All ready to serve, I use a big bowl for each person and put the noodles in first at the bottom and pour over the king prawn curry all over. I use this with a nann bread on the side. Fantastic meal and you do not even have to go to the take-away!
