Fish is a superb food for your good health. It contains loads of oils and vitamins including vitamins A, D and B. It is also high in iron, calcium, magnesium sodium and zinc and loads more minerals. What most people dont realise is that it is extremely versatile and there are so many recipes which can be created with fish. One such recipe is Fish Cakes which can contain many different types of fish depending on personal tastes and are fairly easy to make....


FISH CAKES

ingredients:
~~~~~~~~
1 lb potatoes ( peeled and cut in chunks)
1 lb mixed fish fillets (skinned)
Grated rind of 1 lemon
2 tbsp's cream
1 tbsp plain flour
4oz breadcrumbs
4tbsp veg oil
1 Egg beaten
Salt and pepper.

Method:

Bring a large saucepan of salty water to the boil and cook the potatoes in it for 20 minutes. Drain well when cooked then mash well.

Cover the fish with water in a frying pan, bring to the boil and then reduce the heat and slowly cook for 5 minutes. Drain well when cooked, then flake the fish, keeping an eye out for bones.


Mix the mash and the fish with the lemon rind and cream in a bowl and season well. Shape the mixture into 5-6 cakes.

Put the flour, egg and breadcrumbs in seperate bowls. Dust the fish cakes with the flour and then dip into the egg. Then coat in breadcrumbs. Fish cakes should at this stage be chilled for at least half an hour.

When you are ready to heat the fish cakes, heat the oil in a frying pan over a medium heat. Add the fish cakes and cook, turning regularly.

Serve with a garnish of lemon and side salad or chips.
